5 Minute Power Brunch

I wake up hungry. No, hangry. And this morning I didn’t have any of my go-to breakfast favorites on hand (dern opening season of football Saturday keeping me from the grocery store).

What I did have was time. Yes, we skipped church (see prior football explanation).

And a handful of almost but not quite overripe strawberries. And blueberries. And my favorite Fage. Plus the incredible, edible egg.

Seriously the simplest and fastest breakfast, y’all. And now I’m fueled up for the gym two-a-day that’s soon to follow.

Simply Seasoned Fried Egg
1 large egg
Lawry’s Seasoning Salt
Garlic powder
Freshly ground black pepper
Fresh parsley, trimmed
Spray skillet with Pam Cooking Spray and warm on medium high heat. Crack 1 egg into skillet and season lightly with salt, garlic powder, and black pepper (add a little ground red pepper if you crave the extra kick like me). As egg firms up, flip over and cook until yolk reaches desired consistency. Top with freshly trimmed parsley. MFP entry: Simply Seasoned Egg, 1 egg, 85 cals.

Sweet Enough Berry Smoothie
5 fresh strawberries, washed and sliced
1/4 cup fresh blueberries, washed
1/2 tsp clover honey
2 tbsp chia seeds
1 7 ounce container Fage single serve Greek yogurt
Pulse all ingredients in blender until smooth. MFP entry: Sweet Enough Berry Smoothie, 1/2 cup serving, 119 cals.
